Corn tortillas and refried beans give this dish a fair amount of fiber, and lots of micronutrients. Dip in salsa, guacamole, or sour cream, if desired. Serve with pico de gallo or a spinach salad for a quick, easy meal. I make it without spices so the kids will eat it, but you can heat it up as much as you like. You can make this lower in calories by using low-fat cheese and cooking spray instead of oil, if desired.

Apple Cauliflower Potato Soup

Blending the cauliflower and sweet potato gives this soup a creamy texture.
