Blended tofu adds protein to this fall pasta dish
Corn tortillas and refried beans give this dish a fair amount of fiber, and lots of micronutrients. Dip in salsa, guacamole, or sour cream, if desired. Serve with pico de gallo or a spinach salad for a quick, easy meal. I make it without spices so the kids will eat it, but you can heat it up as much as you like. You can make this lower in calories by using low-fat cheese and cooking spray instead of oil, if desired.
Blending the cauliflower and sweet potato gives this soup a creamy texture.
These make a surprisingly filling meal. Once you get the hang of rolling them, they're a pretty quick one too. Note, the recipe is for one roll, but once you've got the stuff out, you may as well make extra for lunch.
Our go-to meal when we need to cook fast before we give in to the siren call of the pizza delivery guy
Honestly, I don't even know how healthy this is yet, but I'm sharing so that my husband can track it.
Apples lend sweetness to this filling, lowfat winter soup. Great first course.
Beautiful, festive alternative to cole slaw.
