Weekends at our house, my wife makes delicious pancakes using a recipe we modified to make them very healthy. We use whole wheat flour, add all kinds of berries and sometimes bananas to the mixture. They really taste amazing with fruit cooked into them. To balance the macronutrient ratio, we add 50g of whey protein concentrate (WPC80) and an extra 1/2 egg white. We use dried skim milk powder to make the cup of milk for the mix, add grapeseed oil or macadamia nut oil, rather than canola oil and use honey or maple syrup to sweeten it. With the addition of whey, it makes the pancakes a bit flat, so we separate the yolk from the white, whip the egg whites and fold them into the mixture just prior to cooking them which fluffs them up quite a bit. This recipe makes the best panckes I've ever tasted.
