Fast, easy, and oh so tasty "stuffed" peppers all done in ONE PAN! They're not actually stuffed, more like piled on top of but all you have to do is cut up an onion, brown some ground turkey and stir! Personally, I think this needs more peppers. And as someone that HATES vegetables, that's saying something...
Lots of dicing required because fresh veggies are awesome. I never thought I would say that... considering all my life I've only eaten green beans and peas. But this has 7 different veggies in it and I LOVE it as I'm trying to learn how to eat more vegetables. It also stretches the volume of the rice so you end up with 8 1 to 1 1/2 cup servings instead of the 1/2 - 3/4 of a cup if it were just the rice.
I use Nishiki (sushi) rice to make it a little softer and stickier... that way I can enjoy it with half brown rice.
