I choose to use whole wheat penne pasta for this recipe, but you can also use linguine or any pasta you prefer. This is based off of an Ellie Krieger recipe but I added less pasta and parsley, more garlic, and decreased the serving size to 2 to increase the amount of shrimp and veggies per serving.
The simplest, yet most delicious potato salad. Made with Yukon Gold potatoes, it's creamy and rich even with light mayonnaise, and the classic crunch of diced celery.

This recipe is based on the original version by Emeril Legasse, but I lightened it up even further. My boyfriend loves these dipped into fat free ranch dressing! These are a much lighter version of traditional fried jalapeno poppers.
