this was made with ingredients I had on hand, so calories, fat & cholesterol can easily be reduced by swapping out the American Cheese for Reduced Fat Mozzarella and the eggs for an egg substitute.
Another way to add some veggies to your salad...mix it in your dressing!
My husband and I have played with this recipe alot. We've found that a whole pepper was just too much for us, splitting it in half and having either cottage cheese or a side salad made a great meal. Also gave us left overs for lunch the next day.
