this recipe is vegetable rich and they are nearly impossible to detect -
I originally developed this recipe for stuffed manicotti and it works well for that purpose but because this recipe cooks up quickly and can be made ahead, it is a good weeknight dinner option.
I don't normally use low fat parmesan cheese or turkey or chicken italian sausage, but calorie count and fat grams would be lower if these ingredients were used.
This is a hardy one pot meal. The Philadelphia Cooking Cremes all make tasty meals. Wish they came in low fat varieties. BTW- Ronzoni Quick Cook pasta cooks in 3 minutes - no lie! It is awesome even if it isn't a whole wheat variety.
This recipe's ingredient list is limited only by your imagination. I used what I had on hand.
Recipe found in Mable Hoffman's all new Crockery Favorites - published by Fisher Books 1991. I followed the recipe faithfully with exception that I substituted the suggested lean ground beef with veal, pork and beef mix - it came out great !- Thanks Mable
