I modified this recipe from one I found on allrecipes.com, deleting some ingredients, adding others, and expanding the recipe to fit the size of my crockpot.
I deleted oil because I do not find browning the meat does much good in a crockpot, and it takes longer to prepare. I did not use celery because I didn't have it in the fridge. I did not miss it, though if you have some you can add 8 stalks to the soup.
This doesn't need syrup for my tastes
Modified my mom's standard meatloaf with an italian twist
I looked at a recipe for pumpkin soup and thought curry powder would be a good addition. I then went one step further addition various vegetables and put it over rice. My family really enjoys it, and doesn't mind the lack of meat (I'm a flexatarian for health reasons so often make vegetarian meals).
I added curry and garlic to taste, leaving salt for people to add at the table if they so desired.
