This is a very light, tasty, lo-fat alternative to regular muffins with extra protein from the ricotta cheese.
These are a yummy breakfast treat. I use tins with big muffin cups to make 12, but this recipe will make 24 standard sized muffins.
This recipe makes a delicious, fluffy pancake that is a good breakfast entree which also meets my Type 2 Diabetes eating program.
