I always laugh at how people call that mayo and salt mixture served on white bread tuna "salad." I don't taste any veggies. This one has veggies, color and amazing flavor without the fat or dairy.
Taken from Allrecipes.com, calculated down to 3 servings. Servings are still large for a side, so you can treat as 6 servings and enter 0.5 serving into calculator if it's too much. COOK TIME DOES NOT INCLUDE THE TIME NEEDED FOR COOLING.
This recipe is made calculated with full fat Pepper Jack cheese, but you can cut more fat from it by using a less fat cheese. We had this for lunch with some flat bread on the side.

Thick and filling with a mild flavor.
Great with fish tacos, refried beans, steak... and anything you want to add a real kick to. You only need a very little bit to get a great punch of flavor.
