My husband is not a huge fan of fish, but I love it. So, with lent and my goal to lose weight, fish was made a staple. This was a dish that was delicious, low in fat and super easy to make, which makes it a winner in my book.
It was difficult for me to make a lifestyle change with my husband fighting me. This was an easy recipe that helped me stay within my calorie limit while pleasing his palate.
I made this using the leftovers from Chef Meg's Roasted Chicken with Herb Oil
