Quick in that it doesn't take as long as stew, and easy
Makes a huge batch of soup, so start with a big pot! Great for freezing the leftovers and grabbing on the go for lunches, or a healthy comfort food on cold evenings. If you're vegetarian, you can leave out the beef steak and use vegetable broth instead of beef broth
This is a recipe I found that is super easy to make at home and doesn't call for any 'exotic' ingredients that you might not have around the house. I use lots and lots of veggies and don't follow the recipe to a 'T' at all, but the basics are here, tailor to suit!
