Good for apple pie lovers who are dodging carbs!
Boneless/skinless chicken thighs stuffed with poblano chicken sausage.
An oldie from the 1960s - found on the back of a soup can - not exactly healthy but this version does lighten things up a bit! Originally it was called "Prairie Hash" but my sister & I got smart and asked Mom if it contained prairie dog meat, so my mother promptly re-named the recipe in our honor!
This recipe is easily halved, but it freezes quite well so I always make a double batch.
Makes approx. 8 servings of 1.5 cups ea.
Make this with homemade tomatillo salsa! Note that the meat is not browned in flour - lower carbs!
Makes approximately 20 oz. of salsa. Add as much and as many different kinds of peppers as you like.
