I made this with the idea of using as few dishes as possible! It turned out hearty and even my toddler enjoyed it.
*Note: I counted browning the meat and cooking the potatoes as "prep time," and just baking the assembled dish as "cooking time."
This is a great base recipe, and the fillings can vary depending on what's in the fridge.
After being diagnosed with gestational diabetes, I hunted for recipes that fit with my dietician's meal plan. I came up with this recipe as an easy serving of protein in the morning! I make them ahead for the week, and they keep well in a sealed baggie in the fridge.
Mom's recipe for zucchini loaf is pretty fantastic. However, the original recipe called for a cup of oil. Yikes! This recipe replaces the oil with applesauce, making it much healthier but just as tasty.
This is modified from a recipe of the same name on AllRecipes.com. I eliminated the oil, and traded the regular vinegar for rice wine vinegar. A fantastic marinade for shrimp, chicken, or pork.
This is a very slightly modified recipe from the original, found at GroupRecipes.com. Really, the only changes I made was to replace a couple potatoes with some carrots, and add some balsamic vinegar. I also left out the sazon, since I have no clue what it is.
