Breakfast Egg Puffs

Great protein breakfast. These tasty egg puffs rise like mini souffles and are surprisingly filling. You can use whatever fillings and seasoning you like. They freeze well and are great for "grabbing and going".

Mum's Tomato Salad

A simple, but tasty tomato salad taught to me and my brothers by Mum. It has always been a family favourite. Delicious with a cheese omelette and a crusty roll to mop up the juices.

One-Cup Bran Bread

A delicious sweet bread, which is so easy to make.

The original recipe calls for 1 cup of each ingredient (hence the name) but over time I have found I prefer to use less sugar so I only use a half-cup of brown sugar. It doesn't matter what size of cup you use, but for the purposes of this recipe I have listed the individual weights I have used.

Spicy Apple Berry Cream

Stewed fruit with a difference. Delicious as a breakfast dish, chilled and served with Greek Yoghurt. Incredibly easy to make and fills the kitchen with delicious aromas.

Raspberries can be used instead of blackberries or blueberries, although I found it a little too sweet with raspberries.

This is a deliciously rich nut roast - perfect for a vegetarian Christmas. (I use peanuts for a regular nut roast.)
