If you are a seafood lover this brunch dish is perfect. This is simple and nutritious. I substitute the low fat variety of ingredients when possible for lower calories. Add more vegetables to up the vegetable quotient.
I converted this from a recipe for whole chicken breast. I partially shredded the dark meat chicken and it was like substituting chicken for ground beef.
