Sooooo good! They take a little time to prep (ie. cooking the rice before then baking for 45 min) but are easy to assemble and totally worth the wait!

These have a wonderful flavor. Mild chili plus a hint of sweet. You really won't care that they're vegan! I like to add red pepper or hot sauce to my enchilada sauce to give them more of a kick.

Super easy, low fat/carb pancakes that are generous in size but low in calories!
Recipe adapted from WeirdEyes' Dirty Rice. I just modified this so that the Gimme Lean Breakfast Sausage is used, along with Vegan worchestershire sauce and vegan beef flavored broth. I also add some of the Tony Cachere's 'LITE' creole seasoning to taste. SOOOOOO good! I think that using sausage flavored substitute sausage gives it a more authentic flavor.
(I always use reduced sodium products, when available to help lower the sodium of the dish. You will notice there is no added salt but you definitely do not miss it!)
Wonderful light, summery cake. Reminds me of Pineapple upside down cake, minus the loaded nutritional analysis. (It's easier/faster to make, too!)
