I modified this recipe from one I found in Joann Fluke's book The Cinnamon Roll Murder. Her recipe was for a sweet version of this baked pancake.
I have just discovered ramps! They are a wild member of the onion family, and taste like a combination of onion and garlic. The original of this recipe came from a blog called Eggs on Sunday. I modified their recipe by substituting fat-free ricotta, and by reducing the bacon to 2 slices from 4. It makes a great dinner or breakfast entree.
This is a basic pancake recipe with 1 cup of mashed sweet potatoes mixed in. It is a great way to use up any leftover sweet potatoes.
From the Cooking Light recipe, but substituting basil leaves for the sage leaves originally called for.
This great, quiche-like pie is my go-to recipe for pot-lucks and parties. It is also good with some bacon, broccoli or other vegetables added to it.
