Great tasting homemade pancakes that can be made with ingredients usually on hand.

Laura's Meat Loaf

Having this portioned out into individual servings helps to control the amount served. And they look cute! I like to double the recipe and freeze the leftovers; heat them in the microwave for a quick main dish.

Beef Barley soup

Filling soup for winter days! Or any day. Lots of flavor and a lot of soup. Makes 3 qts of soup

Chocolate Bundt Cake - 1/16 of cake

Great homemade flavor, super moist and keeps well. I think the calories are low because there is no oil in this.

Honey Spice Acorn Squash

Acorn squash with a little spice. Very nice side dish.

Scallop Soup (1 cup serving)

Great flavor, low in calories. Real comfort food on a cold day.

Cranberry relish (1/4 cup serving size)

Freezing the cranberries first makes them easier to chop. This is one dish that can be prepared 3 or 4 days ahead of a large family meal. Very good with turkey.

Olive Garden Pasta Fagioli Copycat - 1 cup/serving

This is a hearty soup chock full of vegetables. I use the low sodium V8 juice to cut down on the sodium but the NI is with the regular V8 juice. The beans, ground turkey and pasta make this a substantial soup that will really fill you up and stay with you. I usually add water as I heat it up as it is very thick.

Roasted Pork Tenderloin with Pear Chutney

Good Fall flavor. I had Asian Pears the first time I made this but now use any pear. It's best to use pears that are still firm, not overripe ones.
