Wanted something taco-y, and also get that "fast food" feel. This is a pretty good approximation of Taco Bell's Mexican Pizza, only healthier. Obviously, leaner meat would make this even better, but I used what was on hand.
Veggie lasagna that will fill you up. The butternut squash gives a creamy texture that sort of replaces the ricotta (I love ricotta!), and the Parmesan cheese gives it a lovely savory flavor.
Adapted from eatingwell.com. Yummy muffins, made healthier by using whole wheat flour.
Eatingwell used buttermilk in this recipe, but I switched it out to low-fat plain yogurt for a little more sweetness. Also, added lemon juice to the mix.

Mom says,"My family loves the high fat version of Hamburger pie, so I decided to make this healthier version. I don't skimp on some fats to keep the flavor, but eliminate almost all the fats in the mashed potato."
Got this from Eatingwell.com, and it sounded so good. I made it without the paprika because I didn't have any and it still tasted really good. Little bit of effort, but worth it if you like flavorful food.
I adapted this from a Paula Deen recipe. I eliminated the butter using I Can't Believe It's Not Butter Light instead, or you could even use olive oil. I was super hungry the night I made this so I decided to put this on a french roll, but you could actually eat it as a whole or half a chicken breast, which is what Paula's recipe actually called for.
Saw some yummy rolls at the store and wanted something like a lobster roll and came up with this.
My mom adapted this recipe from my grandma's regular recipe. She always called these sneaky meatballs because there is a lot of spinach and one of my cousins hated spinach or any vegetables and loved these meatballs. Add half the parm into the recipe instead of bread crumbs, or cracker crumbs like my grandmother used.
