I prepare this in the evening and blend it in the morning for a quick breakfast out the door. I just put the fruit & bran in the freezer and the rest in the fridge.
This microwave meatloaf is better than any baked meatloaf I have ever had. My hubby isn't a mushroom fan, so I just leave them out of his half. You can leave them out all together, if you prefer.
Great low carb and high veggie/protein dish!
