A friend passed this recipe on to me. I tweaked it a teensy bit. She makes it in one huge (24 oz.) mug, but that is *way* too many calories for me! I haven't made it yet, but plan to try it soon, divided into 4 servings.

My friend started telling me about caponata when I was wondering what to do with the single small eggplant I was able to harvest from our garden this year. She didn't have a recipe, but gave me a list of ingedients. Tried to figure it out this afternoon and it turned out good. She suggested eating it with pita as a snack or appetizer.
