Slowcooker/Crockpot Chicken, Butternut Squash, and Bacon stew

Just as a note, I am eating a low fat, low carb, high protein diet. This is something I made based on a recipe which called for pasta...I thought I could make a similar base and just not add pasta, but add protein and make it a fuller meal with vegatables, etc. I think this recipe is pretty good, but it could use more spices. Let me know what you think would make it better!

Crockpot Sweet Potato & Black Bean Chicken Chili

This dish could be completely vegetarian is you simply do not add chicken. It is a take on a dish I had at a wonderful restaurant in Denver. There are other similar recipes out there, this is what I made with what I had in my kitchen.

Stephanie Murphy's Crockpot Bacon Ranch Chicken

This recipe was taken from a posting on the Crockpot Girl's Facebook Page. Original recipe by Stephanie Murphy. I put it on here so I could find out the nutritional values, but I did tweak the original recipe slightly - she asked for bacon bits in the original, and I used real bacon. I also added chicken broth, whereas her recipe called for none. I also added red potatoes because I needed to use them.

I know other versions of this recipe may already exist on this site. I mainly put it on here to find out the nutrition info for the exact products and brands I used, since you never know how the items that people put in compare to yours. Let me know your thoughts and different versions of this receipe you have made!

This is a low carb (if you don't serve it with pasta), low fat, high protein meal.

Slow Cooker Mexican Chicken and Vegetable Soup (Tortilla Soup)

This is a recipe based on tortilla soup, but I dont add tortillas. You can certainly do that, and then you have tortilla soup! The other difference between regular tortilla soup receipes and mine is that is mine is very vegetable heavy, as I like my soups rich with veggies. I also dont make mine as brothy as most tortilla soups, but if you like that just simply add more broth at the beginning. Also, you can top it with whatever you would like. Most common toppings are shredded cheese, tortilla strips, sour cream, cilantro, and maybe a squeeze of lime.

Chicken w/ Light Lemon-Herb Sauce by Lidia Bastianich

This is an easy, quick, very flavorful dish. Low fat, low carbs, depending on what side dishes you add.
