It's getting to be late autumn and it's time to take advantage of those winter squashes. One of my favorites is the acorn squash. I also wanted something a little different so I made up this vegetarian chorizo stuffed squash.
A little something different we had from left over brown rice with pork. It's not too sweet, but very tasty.
This is a basic soup recipe you can easily alter or add on to. So if you have cooked chicken, add it…if you have peas, go for it! That’s the beauty of homemade soup, you can mix in whatever you please.
I recently made Shepherd pie. It gave an idea. So this time I used beans and grits and came up with something new.
Many cooks use ground beef in shepherd pie. You should actually use lamb; when cooked with beef it would be called cottage pie. Some who use lamb will use ground lamb. When I do it, I prefer to slow roast a trimmed, boneless leg until it is fall apart tender then shred it. I have also cut up the leg and stewed it with the veggies.
In this recipe, I have left out all but the salt and pepper. If you want to add other spices, go for it. That is up to your taste. Besides, it is a dish from the British Isles and so can be served quite plain.
I wanted to show that my toaster oven was useful for more than just small warm-ups and toast. I tried a corn bread and I was very pleased with the results. Obviously, this can be done in a full size oven, but It worked well. Oh, and I used my Magic Bullet to make Oat flour. How cool is that?
My dearest one found these Leonard Mountain soups at a festival she went to. They are dehydrated soups that have no sulfites, so they work well for those with sulfite alergies. Also no wheat products (no glutens if you need that) and some have no animal products (vegan). They are really good by themselves but also do well when revved up with with other veggies or meats.
This is a delicious easy cook overnight breakfast. Use a rice cooker or a slow cooker.
I had a some requests for my recipe for my ketchup. You all understand that I made it up as I went along and I was able to recreate what I did only because I am so disorderly that the spices were still on the counter!
I love my rice cooker! I make oatmeal in it ... whole grains steel cut oatmeal. So I decided to get brave and i added barley and Bulgur wheat. Toss in some apples and pie spice and I wake up to a house smelling of apple pie and a hot breakfast ready to eat.
We found this Leonard Mountain soup mix. I ramped it up a little with potatoes, corn, and bacon.
When this is finished cooking, it may look like an over easy egg, but it's not really, so a Faux over-easy or faux-ver easy, egg.
For this recipe, you will need a pair of egg rings. Usually used for poaching eggs we are going to put egg whites in each and drop half a mini round of cheese in the middle. When it's done, it looks a little like an over easy egg, but it's lower in calories, and if you're a Weight Watcher, lower in PointsPlus Values.
Well, not really five cans. More like four cans and a couple of cups of Broccoli Normandy
I love my cast iron. I have a couple of pans I use for little things like single serving frittatas.
Layer this in the slow cooker and set it to cook 4 hours on high or 6 on low. It's all veggie so you can have it on Meatless Monday or Vegan Friday.
