Just made this one up for dinner tonight. Turned out great and was a very large serving -- if you're not REALLY hungry I suggest making this into 4 servings. I served it with a toasted multi grain english muffin drizzled with olive oil & sprinkled with garlic powder. And unsweetened applesauce with cinnamon. YUM!
Spelt is a delicious, ancient, 100% whole grain pasta that is easier to digest than wheat and is generally found in health food stores. Other pastas can be substituted if you cannot find spelt ribbons.
