Southwest Chicken Soup (Good as Vegetarian too - substitute rice for chicken)

This is one of my favorite recipes. The original calls for canned corn and canned black beans. I substituted frozen corn and pre-cooked dried black beans to reduce the sodium. If you want a vegetarian option I would suggest adding some brown rice instead of chicken to give you the rice/beans complete protein combo.

This recipe is always a favorite at our house. I have taken it on potlucks and received requests to please make it again at future events. I modified the original by using olive oil mayonnaise, 2% cheese and adding horseradish. You can adjust the mustard and horseradish amounts to taste without changing the calorie count much.

Red Bell Peppers Stuffed with Turkey and Beef (no rice)

A slightly different version of the stuffed bell peppers my grandmother used to make. I used half ground turkey instead of all beef and red bell peppers instead of green.
