Very quick and easy to make....an inexpensive too. Lovely flavour. I got this recipe when visting a "Soupalicious" Event near the Holland Marsh in Ontario
The original recipe calls for 1 3/4 cups of coconut milk. I used 1/2 coconut and 1/2 reg. milk to cut down on calories. Also, the original recipe called for pineapple but I didn't have any so I substituted canned peaches.
Before adding the almonds, I also topped with 1/4 cup of yogurt. Gave it a creamy, yummy flavour and texture, and added one dairy for the day.
Absoutely yummy meal! I often serve it with 1 cup of instant brown rice or a slice of bread. You can also eliminate the ground beef for a vegetarian option.
