I was looking for something to do with some left over squash one day and found these muffins on a recipe site online. I made some modifications and they came out moist and yummy! Take the chocolate out and add some nuts, or berries and it would probably still be great. I'm sure this recipe would work for any kind of squash or pumpkin. It makes 18 large muffins with a calorie count that you wont be able to complain about!
This is a sweet and sour summer favorite in my family. The onions give it a zesty zing! It's all right the first day but much better once it's had some time to soak. This will keep for several days and just gets better with age so it's great for protein supplements at lunch or as a side at dinner!

This soup is from the TV show Chef at Home. Carrot soup with orange and a zing of ginger! I added some vegetable broth because I found it very thick and a touch or corriander for some flavor.
