Easy slow-cooker soup that cooks overnight. This is spicy and nutritious, but most of all, delicious!
Though the amount of cayenne, jalapenos and other spices seems like a lot, they really mellow out in the soup and it won't be extremely hot - just the right amount! The soup thickens and the flavors really blend to a finely seasoned soup once pureed.
Great way to use left over ham - remove all fat and dice to use in this soup. Hearty and delicious!
Here's a zesty version of chicken tortilla soup that's both easy and delicious.
To make it better, homemade tortilla strips are used for the garnish, or even easier, use crumbled baked tortilla chips in place of the tortilla strips.
Serve with lime wedges and extra peppers for taste.
This is a nice spicy blend for Greek salads with the feta cheese already added. Simply spoon it on top of any simple (or elaborate) salad. OPA!

Peaches baked in a sour cream custard - absolutely delicious! Not overly sweet, but very rich and amazing for only 171 calories!
This recipe uses canned peaches, but fresh peaches work well when in season.
This is a family favorite, especially as it becomes cold outside. We top each bowl with a bit of sharp cheddar cheese and it just makes the chili that much richer!
We always loved the texture of German spaetzle in lieu of noodles, so I like to make chicken soup using this pasta. It is available in specialty stores or in the regular grocery store with the specialty foods. Use the long noodle-like pieces instead of the droplets.
You can make this with a fresh fryer chicken but it takes much more time. I use a grocery store roasted chicken, along with the juices to speed this process up.
This is a very simple and not overly-sweet recipe, seasoned with cinnamon, honey and butter.
I was fascinated by the potato & spinach soup recipe, but we like to have chunky soups and want our spinach to taste fresh, so I adapted the recipe to add the spinach at the end and to top with a little Swiss cheese. Delicious and very filling, even without meat!
You can add 1 cup of diced chicken to this recipe, for extra protein.

Fresh salsa made with black beans, but with a little zing! Remove the seeds from the jalapeno peppers if you need to cool this salsa down, or add more peppers and seeds if you like it hot!

This is a simple and quick chicken noodle soup, using the chicken breast pieces of a store-roasted chicken (I pull the breast pieces as soon as I get home to reserve for this soup).
The soup has some new flavors - I add fresh mushrooms to the soup, and serve with baby spinach leaves added to each bowl when serving. The spinach will wilt somewhat in the hot soup but not get soggy. Each bowl is topped with a sprinkle of Parmesan cheese to add to the richness
