I got the original recipe from Dr Oz and I added veggies and.. well, flavor. I was a bit apprehensive about using oatmeal instead of breadcrumbs, but it turned out better than I expected. The only difference is that the loaf will be less firm, so be careful when serving.
This is a take on applesauce oatmeal muffins. I replaced the oatmeal with a cup of mashed sweet potato and used whole eggs instead of just the eggwhites. The muffins turned out super moist.
I just threw this together with leftover chicken breast. I'm just posting this for my nutrition tracker, so feel free to tweak it.
