My loving wife makes this low fat healthy recipe to eat in lieu pasta. I love it!
I used to help my grandmother make this when I was a child. She was from Barbados. When my grandmother made it, she made it as a yeast bread. A lot more work! I've done it both ways. This is not a diet bread! So care is necessary when incorporating this into a diet.
I wanted to make something that was quick and low fat but had a nice amount of protein. Using this with whole wheat pasta provides a wholesome, low fat fulling meal.
Sometimes when I want to maximize my protein in comparison to fat, I will use extra lean ground beef and turkey in my meatloaf. In the last recipe I neglected to show the seasonings. One serving of this meatloaf (4 oz) has about 28 grams of protein and only about 4 grams of fat.
I weight train and my trainer has told me to increase my protein intake. Since I don't eat chicken, I made a lean ground beef & turkey meatloaf that contains about 25 grams of protein per 4 oz serving. The recipe is below.
