This chili uses chicken breakfast sausage in addition to ground beef to add flavor and reduce fat. Always a favorite everywhere I take it.
Olives, capers and anchovies give this dish a zesty kick compared to plain jane tomato sauce.
Very reduced fat in this version, the cake is dense and not at all mushy, which you would expect from the drenching it gets. yummy! Takes 4 hours to chill.
Trying to redo this delicious meal to be healthier than the original version, and it turned out quite tasty! Original method of deep frying the chicken and using more oil in the rice would be about 750 calories and 35 grams of fat for this meal. So a 100 calorie difference on total calorie count, and 24 grams less fat. =)
Slightly healthier option, margarine instead of butter and extra oats for filler. I also use raisins in this instead of chocolate chips sometimes.
A remake of a Nigella Lawson recipe.
This is a modified version of a recipe I originally watched Nigella Lawson make. More flavor, less fat, and includes a carb sidedish.
A basic recipe that doesn't use buttermilk, and can have fruit added if desired.
Ok, these are not really healthy, but they are small and delicious for a quick sweet tooth fix.
I took 2 of my favorite things, Cuban yellow rice, and baked garlic rice pilaf and combined them, with yummy results. Can be done with white rice too of course, this has brown calculated.
I counted 2 tblsp veg oil in the recipe for calories, you use more for frying, but that is about how much ends up missing from the pan at the end.
Made with turkey sausage and extra lean beef, excellent over noodles, spaghetti squash, or eggplant.
Eggplant dip, I leave the skin in mine for more flavor.
