Altered slightly from the No-Noodle Zucchini Lasagna recipe on Allrecipes.com website. Relatively low carb - about 11 gm for a large serving.
Modified from Camilla Saulsbury's 'Enlightened Soups' - I reduced the amount fo rice, eliminated garbanzo beans and added chicken breast for more protein. This soup is very hearty and high in nutrients with spinach and mushrooms.

This soup is thick and creamy w/ potato and non fat half & half, scratch chicken stock, makes a huge amount of soup. Cut recipe in half for smaller families.
