I make this recipe on Sunday night to give me lunches at work for three days. It has a nice balance between the spiciness of the chicken, the sweetness of the strawberries and the tangy creaminess of the goat cheese. Put the dressing in a ziploc bag to keep the salad from getting soggy.
Easy and tasty, yet versatile. You can be healthy and match this with a salad. I like to serve it with pasta and more pesto
I took this recipe from cooking light and substituted olive oil for the bacon and doubled it (it would be simple to half). This recipe makes 8 servings and is even better the next day. 1 serving = 3 weight watchers points.
We like our soup VERY spicy, if you do not I would recommend lowering the jerk seasoning. (2 tsp - 1 T)
