I made this with some ingredients I had available - but you could really get creative with your combination of flavors. Just remember to keep it healthy by keeping your stuffing low on fats and sugars. Additionally, this is pretty much a single-serving recipe, so you'll want to plan accordingly if you are cooking for 2 or more.

These cookies are slightly sweet. They can be made with regular flour and sugar, but these are slightly healthier and gluten & dairy free.
I had some gluten-free pancake mix that I used for the last batch of these, and it worked fine - just leave out the baking soda.
