This is a great snack which fits the 100-150 calorie range with about 15 carbs and 5-7 g of protein. Plus you'll get in a veggie for the day! I first had pomegranates with hummus at an international food party, it is really a fantastic combination!
This could easily be made vegetarian by removing bacon or using a bacon substitute.
The corn and sweet potato creamed with skim milk gives the soup a slight thickness without the need for other thickeners.
