This is my attempt at Pho, a Vietnames soup. It's a wintertime comfort food for me. I don't usually measure, so please feel free to add whatever vegetables are in the fridge and have at it!
This recipe can easily be vegan by using vegetarian broth or "chikn" broth. If the Fenegreek taste is too strong, omit it next time and it will be just as good. The Tarka(mixed spices need the extra olive oil so as not to burn), you can experiment with using less.
An attempt at a lowfat version of Pad Thai. Try it--you'll love it.
