This is a modified version of Italian meatball stew that is lighter but still tastes great.
My biggest problem with eating healthy is cream sauces and gravy so I have been trying different methods to make a dish to fill that craving that wont break my diet; this one turned out amazing. Served over mashed cauliflour mashed potatoes .. yum.
When I was little, they used to serve a plastic cup full of peanuts and raisins mixed together for a snack in my school. I loved that combination so this snack brings back memories and has become a healthy alternative to and old comfort food of mine.
This sweet, crunchy salad is one of my favorites to pair up with Miso Soup.
I have a bowl of this for breakfast along with 1/2 cup of rice and sometimes a poached egg. Dashi granules and Miso paste can be found at any asian market or Whole Foods. I'm not a fan of Seaweed so I have substituted it with Bok Choy.
