Great low cal, low fat recipe for using up your fresh garden tomatoes. You can also use canned tomatos and use a little paramesan or romano cheese for extra flavor.
This is a recipe that I have been making for years. It's very basic but everyone I have ever served it to has loved it!
This recipe uses no oils and is a relatively healthy enchilada version. The only problem is the sauce tends to have a lot of sodium, so be careful if that is something that you have to watch.
