"I made up this recipe several years ago, and I've never given it out. I can't believe I'm publishing this. But it's sooo simple and awesome. Everyone needs this for unexpected company." -from food.com

This dish has been a big hit as a side dish at Calhoun. The kids at Calhoun were fascinated to learn that quinoa is not a grain but a seed. Traditional Mexican ingredients come together in a layered casserole. Flour (corn used here) tortillas replace the pasta used in lasagna. This makes a filling meal. It is an excellent way to stretch ground beef. Feel free to adjust the spiciness to suit your individual taste. As an added bonus, Mexican lasagna is always a big hit with kids. It is easy enough for a junior chef to make with a little supervision.
