I modified this slightly from the version I got from "One Family One Meal" by adding the corn and beans -- makes it a bit more hearty - more of a full meal. Can serve topped with cheese, sour cream, diced avocados... whatever sounds good.
Slightly modified from my mom's version -- more eggs for protein, multi grain and sourdough bread for flavor and variety. Not sure if the amounts are quite right -- will tweak it and update as needed.
I'd leave off the club crackers on top except my kids like a crunchy topping.
Not a diet meal -- just a family favorite to use up leftover chicken or turkey. Could be altered using low fat cheese, or low fat soup to bring the calories down. Hard to figure out serving size -- this is made in a large casserole dish so I guessed 10 servings.
Your complete dinner in one pot! This meal has been a family favorite for years, it appeals to the meat and potato lovers and is also quite low fat. It is quick and easy to assemble in the morning and can be left to cook all day in your slow cooker. Add the dumpling batter to the pot ½ hour before dinner. Serves 6-8
