This is my take on the "Fat Burning Cabbage Soup". Super high in flavor and very low in calories, 39 per serving to be exact!
This was really a wonderful QUICK breakfast/afternoon snack that I figured out. Much better than that thing they try to serve you at Starbucks, if I do say so myself ;)
** To make things go a little quicker in the morning, if you are trying to get out the door, separate the eggs and toss the spinach with the garlic the night before. You can have your food done and ready to eat by the time you done making your coffee ;)

This recipe was inspired by one that I found in October's issue of Cooking Light. The original called for brie and arugula, but I adjusted this to my liking.

Don't be discouraged by the calorie count, with this recipe and the Ranchero Sauce recipe the total calories are 355.4, but remember... That includes all condiments such as sour cream and corn tortillas and is made with a whole egg. Just keep in mind that this is a complete meal. Not necessary to add anything to the meal. Your personal substitutions can lower that calorie number as well.
