Sodium is high but it's quick and tasy with acceptable calories for 3 sausages per serving
A quick weeknight family meal. I serve with potatoes but you could replace that with whole grain pasta. Side not included in calorie count.
This is a great antipasto recipe from my mother-in-law. I gave 1/2 pints in my Christmas baskets this year. Yummy!
This is a mixture of Boston and Manhatten style clam chowders. It's the way my Mom taught me to make chowder.
Sometimes I will make a pot with 3 cans of clams to make it extra clammy. Remember to add the extra calories if you add more clams.
This is my basic chili recipe. I add whatever veggies I have around for added nutrition. The tomatoes and tomato juice I use are reduced sodium varieties.

I divide the finished product evenly into 4 baggies and keep them in the freezer. Each baggie will coat 4 chicken breasts (12oz)
This is a big recipe. It makes at least 9 cups. It is fine to halve or even quarter the recipe.
I have tried to cut back on the sodium but it is still quite high with the Velveeta. Perhaps cheddar is a better choice but I haven't tried it. If it works, I'll adjust the recipe.
Tasty little cakes are great finger food for a party, or a light main course when paired with a spinach salad.
