A great lite soup for those needing to cut down on calories!
It's best to cook this early in the day to let the seasonings blend with the foods for the best flavor!
I have added Swanson Chicken Broth to use in this recipe, but you can use the broth that you cooked the chicken in - just let it set overnight in the refrigerator and then skim off all fat that has hardened on the top - Voila - you have fat free chicken broth!
This is great over a bed of spinach leaves with a lite balsamic vingerette, butter & garlic croutons and a mini box of raisins!
