I missed having cheesy pasta dishes for dinner, so I modified one of my aunt's recipes to contain less fat and subbed in 6 oz. whole grain pasta for 16 oz. white pasta. This is refreshing and summery.
First, it's not really ice cream. But it is good and satisfied my craving for the real thing, and only has about 105 calories in the entire recipe.
A creamy version of my Dad's green chile, but still not fattening. This goes well on roasted potatoes, burritos, etc., and can easily be made into a healthy stew for a full meal.
Makes 4 generous margaritas (200 cal./each), or 6 smaller ones (pictured, 133 cal./each).
I adjusted my mom's recipe to be healthier, because I just can't stand ground turkey. I came up with this and always get rave reviews!
