Similar to the Paleo recipes except without the pecans to reduce the calories. Makes a nice side to baked chicken dishes.
Kinda just threw some ingredients together. It works well as half of a soup and salad lunch.
From Taste of Home. They calculate 197 calories, 6 g. fat (1 saturated), 63 mg cholesterol, 267 mg sodium, 8 g carbohydrate, 1 g fiber, 26 g protein.
Filling breakfast choice for under 250 calories a serving. Original recipe from Cooking Light uses an oven-proof nonstick skillet. As I don't have one of those, I modified this slightly.
A healthy lunch option, easy to make at home and take on-the-go. Pair with a cup of fruit for lunch around 250 calories.
Call it a fake eggs benedict - sauteed honey ham rather than Canadian bacon, no hollandaise sauce, less fat and calories - but a quick and filling breakfast.
Tastier than the frozen variety, though not low cal. Add onions or any other desired ingredients.
I make this when I start feeling a little under the weather. Next day...all better.
