Beef, Vegetable and Barley Soup

I use leftover smoked beef to make this hearty winter soup. I also use reduced sodium broth (not reflected in nutrition values)

Turkey Sausage and Veggie Soup

More of a stew than a soup - I sometimes use potatoes instead of beans and rice instead of barley.

I like using banana peppers (hot or sweet) but have used sweet mini peppers as well.

Roasted Tomato Sauce

This is a great way to use fresh heirloom tomatoes from the garden. It can be served over pasta or rice or as a side dish on it's own. It can also be frozen for later use.
