A gorgeous looking beetroot burger - don't let the name put you off, be brave and try it!
Taken from PPK website. I'm sure that there are ways to make this lighter, but I wanted to see what the nutritional data would be as it stands. I'm sure that this will be delicious enough to justify making my other meals of the day lighter.

Most of the time involved in this is to roast the pepper.
The books states to roast the squash then stuff it, but mine fell apart so I filled four individual deep pie dishes instead. Every recipe I've made from this book has been great, I would recommend it to anyone. Most of the recipes in it are much quicker than this one and simpler too.
