These protein cookies have 3.6g of protein per cookie and are low fat and low calorie (compared to normal cookies!). They're very satisfying and once cooked retain none of their chickpea taste.
Awesome with a coffee as an afternoon snack!
This dish is brilliant for low carbing (simply omit carrot and fresh tomatoes and add more diced eggplant and zuccini if you want low carb) or wheat free diets.
