Mom's Harvest Potatoes

This is an easy hash brown casserole, and is really great. It's not healthy by any means, but if you stick with a measured half-cup serving, it's not the worst thing for your health.

This is a staple for our family brunches and Thanksgiving / Christmas morning. You can easily make it the night before and then pop it into the oven the next morning. You could easily substitute low fat / fat free ingredients as well, but I've calculated it using full fat ingredients since that's what I had on hand.

Crockpot Pulled Pork Tenderloin

This is a surefire pulled pork recipe...easy, delicious, and in a crockpot! This recipe was made using a 3.26 pound boneless, skinless pork tenderloin instead of the more traditional pork butt to reduce fat and improve the texture and flavor.

Macaroni Salad

Cook macaroni & mix with remaining ingredients. Serve chilled.
