Split Peas as a side dish

Peruvian eat legums in many ways, especially as a side dish. This is a tasty one. Super simple and healthy. I like to make a small onion salsa to top it off with, as seen here. In Peru I remember eating this a lot with grilled fish and of course white rice (here served with 1/2 cup of brown) and a salad.

Blueberry whole wheat muffins no butter raw sugar

I took the "To Die for Blueberry Muffin" recipe and modified it using Whole Wheat Flour, Raw Sugar and Apple Sauce in place of butter. I also left off the crumble topping.

Aji de Gallina / Spicy Chicken

This is my take on a Peruvian dish. I am using a roasted chicken I bought at Publix. If you buy raw chicken boil it and use the water instead of the broth listed in the ingredients. If you can't find the hot yellow pepper paste (Aji Amarillo) use a minced jalapeno.

Best served hot and with fresh lemmon wedges to squeeze juice over slice.

This is based off a dish my grandmother cooked a lot. I love it served with white rice being the Peruvian I am. But for me now...it's brown rice. Most often served with Bacalao (a dried very salty fish that is soaked over night in water to remove the salt and rehydrate the fish). It's a Easter dish I think.

Very hearty and comforting soup.

Pineapple Tomato preserve - sugarfree

My grandma used to make this for us as kids. We would have it with toast for breakfast but you can add it to Turkey Sandwiches or yogurt. Get creative!
